Japanese Head Chef Atsushi Yoshida brings the authentic flavors of Aichi Prefecture to Bangkok, featuring a curated menu that highlights the region’s rich culinary heritage with premium ingredients imported directly from Japan.
Nestled in central Japan, Aichi Prefecture is rich in history, craftsmanship, and cuisine. Famous for its bold yet comforting flavors, it is home to culinary treasures like miso katsu, hitsumabushi, and kishimen noodles — all of which hold deep cultural significance.
Chef Atsushi Yoshida, with over 26 years of experience in top kitchens across Japan, Hong Kong, the UK, and the Philippines, brings this legacy to life with a curated menu that honors the traditional flavors of Aichi. Having trained in Michelin-starred establishments and mastered the intricate techniques of sushi, kaiseki, and teppanyaki, Chef Yoshida infuses his expertise into each dish, balancing authenticity with refined craftsmanship. His menu highlights authentic Aichi flavors, elevated with premium ingredients imported directly from the region, offering diners an experience deeply rooted in tradition and elegantly presented.
Diners can savor specialties such as Kurobuta Pork Miso Katsu, featuring Hatcho miso sauce — a signature of Nagoya cuisine – or Hitsumabushi, a time-honored dish of glazed eel over rice, meant to be enjoyed in three unique ways. Other highlights include the signature “Mikawa” Wagyu striploin steak, served on a hot stone with dipping sauces, and Miso Nikomi Udon, a robust dish with slow-simmered wagyu beef tendon in a deep, umami-rich miso broth. Chef Yoshida presents Tenmusu to complete the experience. This beloved Nagoya street food blends crispy shrimp tempura with a delicate rice ball wrapped in nori.
Central to some of these dishes is Hatcho Miso, an ingredient produced for over 400 years and deeply rooted in Aichi’s history and samurai tradition. During the Sengoku Period, the samurai of Aichi Prefecture —among Japan’s most formidable warriors — relied on miso as an unexpected secret weapon. The protein-rich, long-lasting Hatcho Miso, sustained troops in battle and played a vital role in military and economic activities.
Beyond the flavors, A Taste of Aichi invites guests to immerse themselves in the spirit of the prefecture. Visual displays throughout the restaurant will showcase various Aichi’s iconic attractions, from the historic Nishio Castle to the iconic cherry blossoms, creating a setting that transports diners to Japan’s cultural heartland.
